[OAUGNet]-Creating an instance from two source.

 
Hello:
This question is for DBA gurus out there.
We are on 11.5.10.
We have a test instance that has not been used for a while and is quit
outdated with regards to setups (e.g. DFFs) and patches. 
This instance has a different dataset (e.g. Suppliers) from our PROD
which makes it perfect for testing due to confidentiality.
We want to refresh this instance from PROD but use this data set.
Is it possible to refresh this instance from Prod keep the setups but
delete live data and export the data from test instance?
Is there a list that identifies live data tables and system/setup (e.g
profile options) data?
Has anyone done this? 
I am not a DBA I hope I have explained it properly.
Any feedback is greatly appreciated.
